Aligote Dore, cross breed between Aligote and Chardonnay, is a unique experience. Rich array of aromatics, you will find refreshing lime flavors, complex flowers, mix minerality, mixed in with a touch of oak. Creamy, yet acidic at the same time, this wine shows an elegant, and unusual, balance. A wine that will satisfy both Chardonnay and Sauvignon Blanc lovers! Vegan wine, produced on the principles of Biodynamic process. Only 75 cases were produced. Only Celerier's Cellar sells this wine in the USA.
Full cluster in pneumatic press, juice starts alcoholic fermentation in stainless steel tank. Natural fermentation with indigeneous yeast. After 2-3 weeks, it is transferred into French oak barrel for a full Malo lactic fermentation for 10 months. 0% new oak.
After multiple warm/hot vintage, 2021 brought back “cooler” conditions to create a very typical Burgundy Vintage for Maison Arnaud Boue. After a terrible start in the Spring (April) where 40% of vineyards were hit by frostbite, the cooler summer was ideal to let the minerality of the terroir shine. While 2021 was overall a vintage that won’t be remembered in France, the Southern exposition of the estate brought a consistent source of light and mild temperature to allow an extremely well-balanced wine. A niche vintage, for true Burgundy wine lovers!
Bourgogne Aligote, France
Aligote dore is a mutation of Aligote crossed with Chardonnay. It is indigenous of Bourgogne. In this wine, the Aligote dore is sourced from 2 terroirs of the Cotes de Beaune: the first one is in the plain, primarily clay, facing Volnay and Pommard, while the second one is on the plateau of Pommard. Its complex soil is made of silty clay, limestone, and marl.
