A clean fruit forward expression of Burgundy Pinot Noir. On the nose, fresh red fruits of cherry and cranberry followed by an accent of hibiscus and wet soil. Once in the mouth, the tart red currant surfaces with a release of mushroom and an abundant amount of minerality. This light to medium body wine has a racing acidity with fleshy tannins to provide it a backbone to stand up to food.

Certified HVE. Plowing, pruning and harvest done by hand. Consistent yield control by pruning off unnsatisfying clusters to concentrate nutrients for better quality. Minimal to no sysnthetic products with goal to stop them. Biodiversty.
Hand-harvested, 100% de-stemmed, 2-3 days cold maceration pre-fermentation into stainless steel open vats, natural alcoholic fermentation with indigenous yeast for 4-5 days with one light pumping over and a daily cap pushing (altogether 10 to 15 days depending of vintage). Free run and press wine blended for settling. Removal of the must before barreling to start the malolactic fermentation.

2017 in Burgundy was an ideal vintage. Early blooming, spring brought the right amount of humidity without excess. A warm and dry summer without major spikes. Harvested by hand early thanks to an early maturity of the fruits. A rare vintage that can be both consumed now and have a long aging potential thanks to the ideal level of acidity.
