traditionally, in vats, for 3 weeks. Controlled temperature between 28- 30°. Malolactic fermentation in vat on its lees (bétonnage). Maturation: 12 or 14 months in oak barrels from 1 to 5 wines.

2016 was an ideal vintage even more concentrated than 2015. Winter was cool enough to let the plant rest. The spring didn't present any threat to the buds and flowers thanks to a cool and low hidity climate. The summer increased maturity at a faster pace than 2015 thanks to the last really 10 days before harvest. Fruits were even more concentrated with high potentiality. It brought a fantastic quality and aging potential.
