Paolo's winemaking philosophy in Veneto emphasizes minimal intervention and a deep respect for nature. He meticulously seeks out exceptional vineyards and collaborates with knowledgeable growers. Grapes are harvested by hand, and spontaneous fermentation is preferred. The aim is to create wines that encapsulate "the unique soul of the grape variety and the territory that protects it," without adding anything that nature hasn't already provided.

The brand's name, "Cacciatore d'Uve" (Grape Hunter), and its logo of a grape pierced by an arrow, symbolize Paolo's continuous journey of discovery – his travels, lessons, joys, and dreams, all infused into the wines he crafts.
