Grignolino, the wine of the king. The official wine of the Italian Court in the 19th century. The vineyard is located where the limestone soil is shallow and takes on the characteristic light color, particularly suitable for the cultivation of this grape variety. Manual harvesting. Crushing-destemming. Fermentation in stainless steel tanks at controlled temperature with daily pump-overs for less than a week. Thanks to an innovative technique, with the racking of the skins, part of the grape seeds is also removed (grignolino means "full of grape seeds"), helping to lighten the tannic and bitter note of the grape variety. A few months in steel complete the aging before bottling
