Sourced from Bio-Dynamic vineyard. Uses of only biodynamic products (compounds, plant decoction, horn manure and silica) at the pace of the lunar and tide calendar. Soil plowed with a horse. Pruning and harvest done by hand.
25 to 50% full cluster. Use of small amount dry ice to prevent oxydation through the process of Alcoholic fermentation. this first step is done done in stainless steel opened vat. All fermentations are natural with indigeneous yeast. Feet pigeage everyday with light remontage. Malo lactic fermentation in Oak barrel for 2-3 months and aged an extra 15 to 18 months in it.

Burgundy
The summer of 2014 was frankly poor, with wet, chilly conditions interspersed with a few hot days in July and worsening conditions during the first half of August. There was surprisingly little disease, but maturation proceeded slowly. With a reduction of crop, less wine was produced but all effort was focused on making a quality vintage. Villages in Cotes de Nuits faired much better then in the South of Burgundy.
